We often receive the question of why our products are available at only certain times of the year. This occurs because we attempt to run our animals on a natural, low stress schedule. This keeps them healthier and results in a higher quality product.
If you would like one of our products, but the below schedules indicate that it is not available, please still contact us. We maintain waiting lists and your requests help us plan for future demand.
Also, if the size or weights we are processing at aren't fitting with what you need, give us a call. We often get requests for heavier or lighter weights and may be able to bundle several orders together.
Due to high demand for our Lambs, you may want to call and have Samantha place you on the waiting list for the next processing date.
Our next batch of Lamb will be available the beginning of August.
The lamb is available in both halves and whole lambs. Since we work with a custom butcher, you can specify the cuts you want but typical cuts for a whole lamb would include:

2 x Legs (Can be boned, sliced or left in large roasts)
2 x Shoulders (Can be boned, sliced or left in large roasts)
2 sets of ribs (May be boned out and ground)
4 x Shanks (Whole or sliced)
16 x Chops (loin)
We require $25.00 non-refundable deposit per lamb We currently charge $4.75 per pound (hanging weight) for the lamb. We will deliver the lamb to a processor convenient to San Antonio, Texas, where it will be cut and vacuum sealed to your specifications. The processor charges $0.45 a pound for the cutting and $25.00 for a live animal fee.

We will arrange dates with you and the processor and then deliver the lamb to the processor. Once the hanging weight is known, you would pay us for the lamb. When you pick up the cut, labeled and vacuum packed lamb from the processor, you will pay him the processing fee.
Available year round although fewer eggs are available in Fall and Winter.
Since we run on a natural schedule, egg production decreases as the days get shorter. We are actively adding more hens as fast as we can. Production will increase this spring as the days get longer and the new hens come into production.

Turkeys are now available for the Fall 2008 season.
The birds are weighed after processing and the cost is $3.50 per pound. At our target weight of approximately 16 pounds this would give an average price of $56.00 per bird.
Since we do not have freezer space to hold all the requests we receive, orders are taken in advance, a $25.00 non-refundable deposit per bird is prepaid and on the processing day you pick up your birds and pay the balance. If you have a conflict on processing day, please give us a call and we will try to work with you.
Processing days will be 8 November and 15 November for the 2008 season.
Available Spring, Summer and Fall, depending on orders received.
We are currently taking orders for broilers. Once we add additional processing equipment we will increase the number available.
Since we do not have
freezer space to hold all the requests we receive, orders are taken in advance
and on the processing day you pick up your birds.
We order the day-old chicks to meet the demand and 8 weeks later you pick up
your processed birds.

The birds are weighed after processing and the cost is $4.25 per pound. A typical pastured broiler will weigh 3.5 lbs at this stage. This gives an average price of $14.86 per bird.
At this time Rabbits are available about every three months.
Please be sure to reserve any young fryers you may want. At certain times of the year these are very popular 4-H projects and demand can be high. We hope to add more production and be able to offer rabbits at least once a month in the coming year.Call for availability.
Fryers are 12 to 16 weeks old and are weighed after processing. The cost is $3.50 per pound. A typical dressed rabbit will weigh 2 lbs at this stage. This gives an average price of $7.00 per fryer.
